Some combos just never go out of style—and PB&J is at the top of that list. But we’re taking this classic sandwich pairing in a refreshing new direction: popsicles. Creamy peanut butter and sweet berry swirls come together in a frozen treat that’s equal parts nostalgic and innovative.
Best of all? This recipe is completely plant-based—but flexible enough to be adapted with dairy if preferred. In this post, we’ll show you how to make them, share a few variations worth trying, and offer tips for customizing them with Itaberco ingredients. Ingredients: • 1 bag (1000g) Itaberco Legacy 400 Sorbet Mix (for peanut butter layer) |
To Prepare the Peanut Butter Layer: 1 – In a mixing container, combine one full bag of Legacy 400 Sorbet Mix with 2700g of oat milk and 300g Peanut Butter Flavor Compound. Blend until fully incorporated and smooth. 2 – Insert Popsicle Sticks in molds, Pour into popsicle molds, filling each one halfway. Place in the freezer just long enough to set the layer—firm, but not frozen solid. Prepare the Strawberry Layer: 1 – In a separate container, combine the second bag of Legacy 400 Sorbet Mix 2 – Pour gently on top of the peanut butter layer in each mold, filling to the top. 3 – Freeze until fully set—ideally overnight for the best texture and clean separation of layers. 4 – Unmold and serve as-is, (or dip in melted chocolate and crushed peanuts for a decadent upgrade!) 5 – Serve & Enjoy |
Need to work in batches?
The mixed base can be refrigerated for up to 48 hours, allowing for flexible production if mold capacity is limited. This makes is easy to prep ahead and freeze in stages.
Scaling down for smaller operations?
This recipe can be halved or quartered with no loss in quality — ideal for testing, small batch production, or limited freezer space.
