Itaberco’s rosemary flavor compound provides a complex, earthy taste that pairs well with both sweet and savory ingredients. In pastries, rosemary can be used to infuse cake batters or cookie doughs, and can be added to frostings and glazes for a unique and memorable flavor.
Use at a ratio of 3%-5% in cold process recipes, and 5%-8% in baking recipes. Add 0.5-2% to desired beverage. For use in frozen desserts, beverages, and pastry items such as cookies, cakes, buttercreams, mousses, pastry creams, and cake soaks.
